Spicy Corn Elote
INGREDIENTS
Corn on the Cob
Olive Oil - A good drizzle per cob
Salt
Cayenne - optional - just a pinch- will make it spicy!
Chili Powder - just a pinch
Dried Ground Cumin- just a pinch
Ground Coriander- just a pinch
Dried Oregano Flakes - good shaking
Wedge of Fresh Lime
A Grating of Cotija Cheese or Pecorino Romano
DIRECTIONS
1. Preheat oven to 450 degrees.
2. Remove corn from the husk.
3. Place corn on tin foil, drizzle olive oil and sprinkle with herbs- through, and including, oregano. Rub it all together and wrap up. Wash your hands as cayenne and chili powder can sting eyes and noses!
4. Place in oven for 20 minutes or so.
5. Open and serve with lime and grated cheese if desired.
