Avocado Citrus Salad

INGREDIENTS

For two people as a starter course or 4 as a side dish

Works really well as an intro to or paired with grilled or broiled flakey white fish such as sea bass or halibut.

  • 1  Grapefruit or Pomelo

  • ½  Red Onion, sliced as thin as possible

  • 1 Ripe Avocado

  • Salt - ½ Teaspoon

  • Extra Virgin Olive Oil, 1-2 Tablespoons

  • Handful of Cilantro Leaves, ripped into smaller pieces

DIRECTIONS

  1. Cut off grapefruit peel with a knife, removing the inner white skin as well.

  2. Cut grapefruit, against the wedges, into thin slices about ¼ inch thick. Lay flat onto 2 salad plates or one larger serving plate.

  3. Place onion slices on top of grapefruit.

  4. Cut avocado in half and remove pit. Score avocado halves vertically and carefully remove each piece, laying them flat on top of grapefruit and onions.

  5. Sprinkle with salt.

  6. Drizzle with olive oil.

  7. Top with cilantro leaves.
