Vanilla Chia Seed Pudding

This tasty chia seed pudding is an amazing base for a speckling of coconut, cacao or fruit.

It is especially delicious with my homemade nut and seed milk.

Tastier, healthier and much cheaper than fancy cafe grab-and-go. Whip up a big batch of this and you will never go wrong —- or go hungry!

Directions

  1. Add the milk to your Vitamix along with the dates and vanilla. Blend on high until totally amalgamated.

  2. Pour the milk into a medium-size mixing bowl and add the chia seeds. Stir well with a whisk. Cover and refrigerate for a good hour or overnight.

  3. Serve in bowls or transfer to small mason jars.

NOTE: You want this chia seed pudding to be sweet enough, and that will depend on how sweet your nut milk is to start. If you are using “Elana’s Homemade Nut and Seed Milk” (linked above)-- which will make all the difference in flavor-- you want that milk to have been made with 2 dates (and, of course, a teaspoon of vanilla and some salt). If you have made the milk with only 1 date,  you will add three to this chia seed pudding. If you have made the milk with 2 dates, then you will add only 2 more. Got it?
