(Just Sweet Enough) Apple Berry Compote

If you are searching for a life in which dessert is not only not bad for you, but encouraged to eat for health reasons, then you need compotes in your life.

A fruit compote is simply slow-cooked fruit...sometimes with wine, sometimes with spices, sometimes with dried fruit added. They require no real cooking skills. 

They are delicious on their own (I like to keep it in the fridge and take a spoonful whenever I need a little something sweet), topped with (dairy-free) ice cream or whipped cream, or as a topping themselves.

This particular compote has both hints of sweetness and tartness. You will feel the antioxidants rush into your system with every bite. The ingredients are so simple: Apple (adds some sweetness and some texture), blueberries (add sweetness), raspberries (add tartness) and a stick of cinnamon (adds sweetness).

I particularly love them on my Buckwheat Pancakes.


Makes 2 cups compote

INGREDIENTS

  • 12 oz fresh blueberries

  • 6 oz raspberries

  • 1 large or two smaller sweet apples, like Fuji, peeled and cut into ⅓ inch cubes

  • 1 stick cinnamon

DIRECTIONS

  1. Add all the ingredients to a medium saucepan and place over medium heat. Cover the pan and let simmer until well bubbling and the raspberries have all but disintegrated and the blueberries have begun to burst. Around 20-30 minutes. Stirring every so often; it’s ok to cook longer on a lower flame. 

  2. Take off flame and let rest until cooled so flavors can meld. 

  3. Reheat to use if, if desired.
